Rava Kesari – The Famous South Indian Dessert

Rava Kesari is also known as Kesari Bath which is one of the easiest and most famous south Indian dessert made from Semolina/Sooji/Rawa during festivals and special occasions. Rava Kesari has a very soft melt-in-mouth texture. Some people thought that sooji halwa and Kesari Bath are the same. However, they both are different; Saffron is one of the ingredients that give Kesari Bath a very different texture and appearance.

Rava Kesari, we eat in restaurants is velvety & moist. It remains moist and soft due to the weight of ghee. Here is how to do it.
 

  • ½ cup Golden Bansi Kesari Rawa/Sooji
  • 5-6 tablespoon ghee
  • 1 ½ cup sugar
  • 2 cups of milk
  • A little saffron (Kesar)
  • Few cashew nuts and ½ tablespoon of green cardamom powder
